This sugar free pecan pie recipe is really DELICIOUS!!! It is a healthy alternative to other pecan pies and it is perfect for a diabetic who is looking to find recipe they can live with. However, I want to let you know that the consistency is more custard-like when compared to a normal pecan pie. The lack of sugar and it caramelizing will keep the consistency different. So in the end it may not be exactly like Nanny's Pecan Pie Recipe, but you should find that it will satisfy that craving you have but are afraid to fulfill because of all of the sugar in a traditional pie.
Ingredients:
Frozen pie shell
3 eggs
5 teaspoons Splenda
1/3 c melted butter
1 teaspoon vanilla
1 cup sugar-free pancake syrup
1 cup chopped pecans
Directions: Preheat oven to 340 degrees. In your mixer combine three eggs, Splenda, butter, vanilla, and syrup. Mix until completely smooth.

Next, fold in the chopped pecans. Stir.
Pour into your unbaked pie shell. Don’t forget to cover the edges with your pie crust shield !!
Bake for 50 minutes (at 340 degrees)or until golden brown, making sure the pie does not jiggle. Let it set until cool. YUMMY!! Plus, it tastes great with a couple scoops of vanilla ice cream!! Make sure it is sugar free ice cream though!!!
