These pecan sandies are super simple to make and are delicious! Our three year old kept trying to grab the spoon to lick the dough it was so yummy!! I even caught him licking the scooper while he was scooping me out the dough.
1 stick of butter
½ cup brown sugar
1 ½ teaspoons vanilla
1/8 teaspoon salt
1 cup all purpose flour
1 cup chopped pecans
In a mixer, combine the butter and brown sugar until smooth dough is formed. Then add in the vanilla and salt and combine. Gradually, add in the flour til the dough is smooth again. This takes a few minutes so just keep mixing. Then, fold in your pecans and stir.
Preheat oven to 350 degrees. Roll mixture into balls. I used a tablespoon but that was too big so ended up using ½ tablespoon. Place onto baking sheets. I found that the stoneware works best, but if you don't have that grease a cookie sheet but do not put them on the bottom rack, the bottoms will brown too soon. Then, flatten with a cup that has been wetted. Bake for 7 minutes then rotate in the oven and bake another 7 minutes. |
