These pecan pie bars didn't stay around our house very long. They are very easy to make, delicious, and can be used as a sophisticated party dessert or just a yummy treat.
Let's begin by preparing the bottom layer (crust).
Bottom layer:
½ cup of butter (let this sit out and soften)
½ cup brown sugar packed
1 cup all-purpose flour sifted
Dash of salt
Preheat oven to 375 degrees. Beat butter until smooth until smooth and creamy. Gradually add brown sugar, flour and salt. Pour into ungreased 9 in pan and bake for 10 minutes. It is not completely done, which is what we need.
Now you are ready for the topping.
Topping:
3 eggs
1 cup brown sugar packed
2 Tablespoons flour
Dash of salt
½ cup chopped nuts
1 cup coconut
1 teaspoon vanilla
Move the oven temperature up to 425 degrees now. Beat eggs until frothy. Mix in the brown sugar, flour, and salt until mixture is smooth. Add nuts, coconut, and vanilla. Pour onto the partly-baked bottom layer. Bake 15 to 18 more minutes. Cool for an hour or so before cutting into bars.
