Crust Ingredients:
1 box yellow cake mix
1 egg
½ c melted butter
Mix the ingredients above well, then reserve 2/3 c batter. This was extremely thick for the crust.
Then I patted it onto a 9 X 13 glass pan which I had sprayed with oil. Bake this for 10 minutes or until brown at 325 degrees.
Our 2 year old was impressed with this batter; we always has to lick the beaters. He told me, "It's perfect!" and "It's delicious!" I have to say, I agreed with him.
Filling Ingredients:
1 ½ c white Karo syrup
2/3 c batter
3 eggs
½ c brown sugar
1 tsp vanilla
1-2 cups pecans (I used 1 ½) (whole, chopped or minced)
Mix all of these ingredients together with a mixer.
Then pour it on top of the crust and bake it for 45-50 minutes at 325 degrees. If you're unsure that it is done, test it every few minutes by giving the pan a jiggle. When the center doesn't jiggle, you're good. This cake is gooey just like the pie and tastes almost exactly like eating a pecan pie, but an added bonus in the crust!
