If you can't resist chewy chocolate chip cookies then these chocolate chip pecan cookies are a must-eat!!
You'll need:
½ c butter
½ c sugar
1 large egg
1 tsp vanilla
1 ¼ c self-rising flour
1 (6 oz) package semi-sweet chocolate chips
½ c pecans (chopped, whole or minced)
Preheat your oven to 350 F. Beat the butter and the sugar until a smooth creamy texture is attained, beat in egg and vanilla. Slowly, add the flour until a sticky dough is made. It takes a little arm-work to get all of the flour in, but keep stirring. Then stir in the chocolate chips and the pecans.
I used an ice-cream scoop and spoon and scooped them out onto a round-baking stone because the bottoms don't burn. It made 16 large cookies.
This dough was AMAZING! It almost broke my heart to cook it! My son and I were enjoying licking off all of the batter! I didn't do this, but will next time I make them: if you want perfectly rounded cookies, put flour on your hands and make small balls to have uniform cookies. They were extremely soft, not hard cookies. They were delicious and didn't stay around the house long. Enjoy!!
